"Grace Vineyard Year in a bottle", a fresh and easy to drink wine planned by cultural celebrity LEUNG Man-tao, is produced by Vistopia and Grace Vineyard companies across the border.
Grape Variety: 85% Cabernet Sauvignon, 15% Merlot
Fermentation Type: Portions of the fruits undergo Carbonic Maceration. Another proportion are de-stemmed and fermented in stainless steel tanks at relatively low temperature.
Aging Type: Approximately 10% of the wine undergo MLF in 225 L used (neutral) barrel over 6 weeks. The remainder wine are unoak and completed MLF in stainless steel tanks.
Tasting notes: This year, the variety we use for carbonic maceration were Cabernet Sauvignon out from the same vineyard. We include 20% of Carbonic maceration wine in the final blend. The purpose is to keep the consistency of the wine as a style each year.
The wine has dominant aroma of red fruits, asian spices and lightly under ripe banana to strawberries characteristic. On the palate, the texture are medium to full and filled with fruits sweetness on the finish.
We personally love to consume this wine within the next 6 to 12 months for the core freshness from the fruits, but it should further develop into a more interesting character under proper cellaring for another 2 to 3 years.
